Cherry blossoms are the heart of Japan and can be said to symbolize the goodness of Japan. It is literally the unofficial national flower of Japan. It has been celebrated for centuries and is an important part of Japanese culture. There are many types of cherry trees in Japan, most of which bloom for a few days in the spring. This Seasonal viewing is done with an event named hanami parties (flower viewing) under the trees.

At any time of the year, one can enjoy Sakura season by using Salted Sakura products. The fragrant aroma of the flower is preserved with salt and vinegar. This is a blend of Sweetness and salty taste. Also, it is used as an important element for making various Japanese cuisines. Sakura tea is also served for special guests and at weddings. Salted Cherry Blossoms can be chopped and can be used as a garnish in drinks.
Each flower is selected and cut according to the size M and the length of the axis is 5mm.
In case of Frozen cherry blossom, the salted cherry blossoms are de-salted and frozen.
The process of preserving young cherry blossoms consists of several stages: Gathering, washing, salting, pickling, and drying.
Gathering and Washing - These flowers are edible and have a lovely subtle fragrance. Generally, it works very well in syrups and jams whenever they bloom. However, for making Salted Cherry Blossoms, only buds that have not yet fully opened, are used.
Salting -The first step is, of course, to wash the flowers carefully with clean water. Then kitchen towel is used for drying it initially. Finally, to remove as much water as possible before continuing with the salt step, kitchen paper is used. The salt absorbs the moisture from the flowers, so we don't want to go around too much when washing.
Pickling - After Three days, the excess salt solution is carefully squeezed out the remaining salt crystals are washed. They get very reduced in size. But, there’s nothing to worry about as one doesn’t need to use them much in recipes to get their unique taste.
Drying - After salting and drying flowers, they are drained and dried for storage. The aromatic purple vinegar from the flowers is reserved for use later in sushi or dips. This cherry blossom flavor adds color and enhances the taste of the food product. After carefully planting the flowers in their original form and drying them with a paper towel, the flowers take on a much deeper pink color. Then one needs to sprinkle the flowers with a teaspoon of fine sea salt (you can also try this step with sugar if you want an even sweeter result) and let them dry overnight before storing them in a sterile airtight jar.
